Chocolate Flax Low-Carb Muffins
For A Single Serving
Ingredients
1 scoop Chocolate Protein Powder
2 Tbsp ground flax meal
1 egg white 1/2 yolk
2 packets stevia or splenda or to taste
1 tsp baking powder
sprinkle of cinnamon
1/2tsp Vanilla
1 tsp olive oil (optional if you like moist) I made without to keep calories down, still came out good
water as needed
1. Mix all ingredients together and adjust the thickness with a little bit of water so it is thick like a batter.
2. Place in microwave safe bowls and microwave on high for about 1-2 minutes until it puffs up.
3. Turn out and cool.

For 6-8 Muffins
2 Whole eggs + 2 Whites
1Tsp Vanilla
1 Tsp Olive Oil (optional)
2T. Cinnamon
2 packets Stevia
2 tsp. baking powder
4 scoops Chocolate Protein Powder
½ cup golden flaxmeal
Mix all ingredients together and adjust the thickness with a little bit of water so it is thick like a batter. Spray muffin cups with PAM cooking spray. Spoon into cups and bake for 25-30 min at 350. *I made in Nu-Wave Oven on high for 15min.
You can modify flavoring by using different proteins, use Banana flavor protein for banana muffins!! Try different flavorings, nuts, dried fruit etc. |
